Ginger-Glazed Carrots

3 cups baby carrots
1 tsp fresh ginger (finely grated)
1/4 cup sesame oil
2 TB pure maple syrup
2 TB Apple Cider vinegar
pinch of salt
2 sprigs of thyme for garnish

preheat oven to 400
Place carrots in baking dish
Add grated ginger, oil, syrup, vinegar and salt to small bowl
Whisk together
Pour mixture over carrots to evenly coat
Cover Carrots
Bake for 45 minutes
Garnish with thyme
Makes 4 servings
