BBQ Chicken Salad

1/2 lb chicken (4 people), 1 lb for 8 persons
Cumin, chili powder, paprika, black pepper
8 cups romaine lettuce
2 corn on the cobs
1/2 cup black beans
1 cup red bell pepper chopped
1 cup jicama chopped
Avocado chopped
1/2 cup plain Greek yogurt
1 cup fresh salsa
lime wedges
2 tsp taco seasoning
Green onions
BBQ Sauce

1) Rub chicken in cumin, paprika, chili powder, and black pepper
2) Cook over medium heat
3) Grill or boil corn / remove from cob and set aside
4) Chop romaine lettuce, peppers, jicama, avocado (i chopped apples and red onions too)
5) Layer lettuce, chicken, corn, black beans, peppers, jicama, and avocado
6) Top with greek yogurt, salsa, BBQ sauce, cilantro, and green onions
7) Squeeze lime juice on top and sprinkle taco seasoning over salad
