Mango Rice

2 cups jasmine rice
2 cups coconut milk
2 cups water
1 tsp salt
1 tsp white vinegar
2-3 tsp sugar
2 cups diced mangos
1/4 cup chopped parsley or cilantro
1/2 cup sliced green onions
1/4 tsp black pepper
1 TB butter

1. Combine rice, coconut milk, water, salt, vinegar, and sugar in saucepan.
2. Bring to boil
3. Turn heat to low and cook covered 20 minutes
4. Allow to stand 5 minutes
5. Add butter, mango, parsley, green onions, pepper, and salt
