Breakfast Scramble

12 oz. lean turkey
24 oz. diced red potatoes or sweet potatoes
2 cups chopped spinach
1 cup chopped yellow onions
1 cup chopped mushrooms (depending on audience)
dash of onion and garlic powder
dash salt and pepper to taste

1 large egg per serving
2 TBS Salsa

1) Microwave diced potatoes for 2 minutes
2) Heat skillet to medium heat
3) Cook turkey until browned
4) Add potatoes, spinach, onions, mushrooms, and seasoning
5) Cook until onions soft
6) Fry eggs one at a time
7) Place egg on top of turkey mixture
8) Top with Salsa
