Sour Cream Lemon Pie

Lemon Layer
2 cups water
1 1/2 cups sugar
1 tsp salt
2 tsp grated lemon peel
2 TB butter
1/2 cup lemon juice

Corn Starch Mixture
1/2 cup plus 2 TB cornstarch mixed in 1 cup of cold water

Sour Cream Layer
3/4 cup sugar
1/4 cup corn starch
3 cups milk
1 cup sour cream
4 egg yolks
1 1/2 tsp vanilla
1 TB Butter

2 TB butter
1/2 cup lemon juice

1) Mix first four Lemon Layer ingredients (water, sugar, salt, lemon peel) in sauce pan and bring to boil
2) Add Corn Starch Mixture and blend until thick
3) Remove from heat and add butter (2 TB) and lemon juice (1/2 cup)
4) Pour into prebaked pie shells until half full
5) Add first three Sour Cream Layer ingredients (sugar, corn start, and milk) to sauce pan and cook on medium heat and stir until thick and bubbly. Reduce heat and cook for 1-2 more minutes (stirring constantly)
6) In a separate bowl add 2 cups of hot mixture to 4 egg yolks. Mix and return to pan.
7) Simmer and cook. Stirring constantly for 1 more minute
8) Remove from heat. Stir in 1 TB butter and 1 1/2 tsp vanilla
9) Put in separate bowl and let cool.
10) Add one cup sour cream. Stir and whisk together
11) Add Sour cream layer over lemon layer.
12) Let chill and serve with whip cream.
