Pesto Chicken Panini

Ingredients
12 oz chicken breast (raw)
1 yellow onion
1 red bell pepper
3 TBSP Pesto sauce
2 Laughing cow cheese wedges (lite)
4 Stonefire Naan Bread (mini)


Directions
1) Preheat grill to high heat then turn down to medium
2) Spray grill with non stick cooking spray
3) Grill chicken 5 to 7 minutes per side
4) Brown onions and peppers in frying pan until tender and fragrant
5) Spread 1.5 TBS pesto sauce on two pieces of Naan Bread and 1 cheese wedge each on the other two pieces of bread
6) Add 4.5 oz chicken and 1/2 the onions and peppers to each of the two pesto naan breads.
7) Place each of the cheese wedge naan breads on the pesto naan breads to make two complete sandwiches.
8) Place in Panini Maker and cook
9) Cut each sandwich in half for 4 total servings.
