Open-Faced Tuna Melt

Ingredients
10 oz Tuna (chunk light)
1 Shallots
2 TBSP Olive Oil Mayo
1 TBSP Lemon Juice
1 TBSP Flat Leaf Parsley
1 tsp Siracha Sauce
4 Multi-grain English Muffins
8 slices tomatoes
3/4 cup shredded low fat cheddar cheese
8 stalks celery


Directions
1) Preheat oven to high broil
2) Combine Tuna, shallots, mayo, lemon juice, parsley, and siracha sauce in small bowl.
3) Weigh and divide into 4 servings
4) Distribute each portion on to one multi-grain muffin
5) Top with one tomato slice and 1.5 TBSP shredded cheese
6) Place on baking sheet and broil for 3-5 minutes
7) Two muffins
8) Divide 15g avocado between the two muffin halves and add salt pepper to taste
9) Enjoy warm with 2 celery sticks on the side
