Egg White Omelette

Ingredients
60 grams sweet potato
6 asparagus spears
3 egg whites
1 tsp water
25g avocado
2 TBS Parmesan
2 TB Salsa
Directions
1) Heat frying pan to medium heat
2) Microwave shredded sweet potatoes 2 mins with cooking spray
3) Fry asparagus with sweet potatoes
4) Saute with seasonings and set aside
5) Beat egg whites
6) Cook for 3 minutes
7) Flip eggs to other side
8) Add veggies and cheese to one side
9) Fold over
10) Top with salsa, avocado, and parmesan
