Coconut Curry

Ingredients
1/2 cups Jasmine Rice
2 cups red bell pepper
2 cups broccoli
2 cups sugar snap peas
2 cups yellow onions
12 oz raw chicken breast
2 TBS shredded coconut
1 cup curry simmer sauce
Toppings: Lime, Cashews, green onions


Directions
1) Preheat oven to 400 degrees
2) Cook rice
3) Chop vegetables and roast 20 minutes
4) Cube and brown chicken
5) Add shredded coconut
6) Add veggies and simmer sauce
7) Serve over rice
8) Top with lime juice, cashews, and green onions
