Vegan Chickpea Curry

Ingredients
1/2 cup basmati rice
1 cup water
2 pinches salt
2 medium onions
2 tbsp olive oil
3 cloves garlic
1/2 lime
2 tbsp curry paste (thai Kitchen Red Curry Paste)
1 can low fat coconut milk
1 can chickpeas
2 tbsp soy sauce
2 medium tomatoes
1 cup basil leaves
8 oz. fresh mushrooms


Directions
1) Boil rice and salt, 8-10 minutes
2) chop onions, garlic, basil, and juice the lime
3) Add oil and onions to large pan and cook on low medium heat until onions soft and clear (about 5 minutes)
4) Add garlic and grill one more minute
5) Add one tbsp curry paste, and coconut milk, stirring until curry is dissolved
6) Throw in chickpeas and chopped broccoli if using, and soy sauce
7) Cook on medium heat for 5 minutes, bringing curry to a boil
8) Add tomatoes and chopped basil, and lime juice and gently simmer for another 2 minutes
9) Add fresh mushrooms
10) Server curry on top of rice
