Lemon Chicken Piccata

Ingredients
2 large boneless, skinless, chicken breasts
salt and pepper
1/4 cup all purpose flour
1/4 cup bread crumbs
1 egg
1 TB water
2 TB olive oil
2 TB butter
1 cup chicken broth
2 lemons
3/4 cup heavy cream
1/4 cup capers
--over pasta or mashed potatoes


Directions
1) slice chicken breasts in half horizontally, season with salt and pepper
2) beat egg in shallow bowl with 1 TB water
3) Add flour to another shallow bowl, Add bread crumbs to yet another bowl
4) Coat chicken with flour, then egg wash, then bread crumbs
5) Heat butter and olive oil in large skillet over medium high heat
6) Cook chicken three minutes per side and set aside
7) Reduce heat to medium low, add chicken broth, cream, juice from lemons, and capers. Allow sauce to cook and bubble for 3-5 minutes.
8) Serve chicken over mashed potatoes or pasta, then top with sauce.
