Japanese Golden Curry

Ingredients
1 lb cubed chicken
1 whole onion
3 carrots
3 or 4 medium sized potatoes
1 TB olive oil
2 1/4 cups water
1 Box S&B Golden Curry
1 cup rice
Directions
1) Stir fry meat and vegetables in large skillet (medium heat). Get potatoes and carrots started in microwave so they soften quickly.
2) Add 2 1/4 cups water and simmer until everything tender (15 min)
3) Optionally add sauteed mushrooms and chopped green onion
4) Add S&B curry pieces. Simmer 5 more minutes.
5) Serve over rice
