Rice Bowl with Fried Egg and Avocado

Ingredients
4 scallions, thinly sliced
2 cups cooked brown rice
1 tsp red wine vinegar
Salt and Pepper
3 TB Olive Oil
4 large eggs
1 avocado chopped
Pace Salsa


Directions
1) Mix scallions, rice, and vinegar in small bowl. Season with salt and pepper
2) Heat oil in non stick skillet over medium high heat
3) Crack eggs into skillet, season with salt and pepper, cook until whites are set around edges (about 1 minute)
4) Flip eggs and cook to desired texture (maybe 1 more minute)
5) Divide rice amongst 4 bowls, top with eggs, avocados, and salsa
