Balsamic Chicken

Ingredients
3 lbs chicken breasts
Flour for dredging
1/3 cup olive oil
2 large onions chopped
5 cloves garlic minced
1 cup chicken broth
1/2 lb mushrooms, cleaned and sliced
1/2 cup balsamic vinegar
1/2 cup black olives, pitted and halved (or capers)
1/2 tsp thyme
1/2 tsp rosemary
10 parsley sprigs, leaves only chopped
salt and pepper


Directions
1) Clean and dry chicken
2) Dredge chicken in flour and brown under medium heat, then set aside
3) Add onions and garlic to skillet, with more olive oil, and saute over low heat. Until onions are translucent
4) Do not brown onions and garlic
5) Add chicken, broth, balsamic vinegar, olives, mushrooms, thyme, rosemary, parsley and salt, pepper.
6) COver and allow to cook on low heat for 15-20 minutes. Until chicken is cooked and tender.
7) Add more vinegar and broth if pan starts drying out (equal amounts)
8) Serve over rice
