Chicken Mole

Ingredients
1 slice white bread or 2 slices baguette
1 garlic clove unpeeled
1/3 cup whole almonds
1 ancho chile
1 TB vegetable oil
1/2 white onion fully chopped
1 pint grape tomotoes
1/2 small canned chipotle peppers in adobo sauce (plus 1 tsp sauce)
1/2 large banana cut into pieces
2 TB and 1tsp unsweetened cocoa powder
1 1/2 tsp light brown sugar
1/4 tsp ground cinammon
1/4 tsp dried oregano
1/8 tsp ground cloves
1 1/2 cups chicken stock
Salt and Pepper


Directions
1) In 9 inch skillet, toast bread over medium high heat, turn once. Tear bread into large pieces and pulse in blender until fine crumbs. Transfer to large bowl.

2) In skillet, cook garlic over medium high heat. Turning and stirring until soft and charred (about 5 minutes). When cool, squeeze clove from skin and add to bowl with crumbs.

3) Toast almonds in skillet over medium heat. About 3 minutes. Transfer to bowl.
