Chicken Fettucine Alfredo

Ingredients
8 oz. Chicken breast raw
5 oz. Fettucine Whole Wheat dry
2 cups cauliflower
1 dash sea salt
1/2 almond milk
1 TB Olive Oil
1 TB Butter
12 Cherry Tomatoes (I used crushed and diced)
2 minced garlic cloves
1 dash black pepper
1/4 cup grated parmesan cheese
2 TB Nutritional Yeast flakes
1/2 cup marinara sauce
1/3 cup mozzarella cheese
4 tsp fresh basil leaves



Directions
1) Cook chicken and cube, season with salt
2) Cook fettucine according to packages
3) Boil cauliflower until tender (about 10 minutes).
4) Drain cauliflower and place in blender with almond milk. Blend until smooth
5) In large pan, add olive oil, butter, tomatoes,. Cook over medium low heat until butter melted
6) Add garlic, pepper, and creamed cauliflower. Bring to simmer, stirring constantly.
7) Add parmesan cheese, nutritional yeast, and marinara sauce and simmer for 8-10 minutes
8) Stir in mozzarella cheese until smooth
9) Remove from heat
10) Add pasta
11) Divide in 4 portions
12) Top with 1.5 oz of chicken and basil leaves. Season with salt and pepper.
