Shrimp Santorini

Ingredients
1 lb shrimp (peeled, deveined)
4 sweet ripe tomatoes grated (can used quality canned)
1 sweet onion grated
1-2 cloves of garlic pressed
3 chicken bullion cubes (knors)
dash red pepper flakes
olive oil
Italian parsley
feta cheese


Directions
Make the sauce... (can be made before hand)
1) Using box grater, grate the onion in a blow
2) Grate the garden tomatoes (or use jar of good crushed tomatoes, blended)
3) In a skillet, add olive oil and cook onions
4) Add garlic cloves (pressed) and red pepper flakes.
5) Once onions are sauteed, add the tomatoes to make the sauce
6) Season with bullion cubes

Just before serving....
1) Add the raw shrimp to skillet to cook with sauce.
2) Once cooked, top with big chunks of feta cheese and copped parsley
3) Serve with rice or pasta (angel hair pasta)
