Greek Lemon Chicken (with potatoes)

Ingredients
1 whole chicken (remove gibblers)
6-8 potatoes, peeled and cut into wedges
2 lemons
1 onion, sliced into thin wedges
1 bay leaf
3 cloves garlic
Oregano
Olive Oil
Salt and Pepper
Fresh thyme (or dried)


Directions
1) In large roasting pan, toss the potatoes and onion together with olive oil, juice from one lemon, 1 clove garlic pressed.
2) Season with salt, pepper, and oregano
3) Push the potatoes to side of pan (single layer)

Chicken:
1) Place in center of roasting pan and coat with juice from remaining lemon
2) Season with salt, pepper, and thyme.,
3) In the cavity, also add garlic cloves, 1 bay leaf, the squeezed lemon half

Bake uncovered at 350 (stir potatoes if necessary)
Juices from chicken should come out of cavity into potatoes
Cook 2 to 2.5 hours depending on size of chicken
