Yiayia Stavroula Chicken

Ingredients
4-5 ripe garden tomatoes (or canned)
1 chicken in pieces (3 lbs. total)
1 onion grated
5-6 whole peppercorns
4-5 whole all spice ???
2 bay leaves
Feta cheese
Directions
1) Using a box grater, grate the onions and tomatoes. Keep separate.
2) In a heavy cast iron pot with lid, heat a 2 TB Olive oil and begin browning the chicken pieces on both sides.
3) Remove and keep cooking to sear in batches
4) Add more oil and saute the onion
5) Add the grated or crushed tomatoes
6) Return chicken pieces to the pot and add the spices (all spice, peppercorns, bay leaf)
7) Make sure there is enough liquid to cover chicken
8) Cover lid and simmer for almost an hour
9) Remove from heat
10) Crumble large chunks of feta cheese, Season with S & P
