Chicken Pad Thai

Ingredients
4 oz Pad Thai Brown Rice noodles (uncooked)
1/4 cup natural peanut butter
1/4 cup vinegar (rice)
2 TB coconut aminos or low sodium soy sauce
2 TB raw honey
1 TB garlic minced
1/2 cup onions
11 oz chicken breast
2 cups red bell pepper
1 cup green onions
2 cups bean sprouts

Toppings
-------------------------
20 g peanuts
4 TB lime juice
4 servings cilantro
sea salt and black pepper


Directions
1) Cook noodles according to directions. Drain and set aside.

2) Whisk peanut butter, rice vinegar, coconut aminos, and honey in a bowl. Add a little water if needed. Set aside.

3) Spray skillet with cooking spray and add minced garlic and onions. Chop chicken and add to skillet. Cook until chicken is golden brown and cooked through.

4) Add veggies and sauce. Cook until tender.

5) Add noodles last. Stir in and cook for 1 minute

6) Garnish with 5g peanuts, lime juice, and fresh cilantro. Salt and pepper to taste.
