Curried Lentil Soup

Ingredients
1.5 TBSP Coconut Oil
1/2 cup yellow onion
1 cup carrots
2 stalks celery
1/2 TBSP fresh ginger
1/2 tsp French minced garlic
1 tsp curry powder
15 oz crushed tomatoes
1 1/4 cups green lentils
6 cups water
1/5 cups coconut milk light
2 TB Lime Juice
Sea Salt, Black Pepper
1 dash cilantro


Directions
1) Add coconut oil to large pot over medium heat.
2) Chop onions, carrots, and celery, add to pot, saute 5 minutes
3) Add ginger and garlic, stir in
4) Add in dry lentils, crushed tomatoes, and 4-6 cups water, and coconut milk
5) Reduce heat, and let simmer 60 minutes
6) Stir in lime juice, salt, and pepper.
