Cheesy Sausage Egg Bake

12 eggs
1 cup bell peppers
1 cup onion
2 cups sweet potatoes
1 jalapeno
2 apple chicken sausage
1 cup gouda cheese
1/4 tsp black pepper
1/2 cup parmesan cheese (freshly grated)


Directions

---

1) preheat oven to 400
2) Add all eggs to large bowl and beat well
3) chop peppers, onions, jalapenos, and slice chicken sausage
4) Grate sweet potatoes
5) Add all veggies, gouda, and pepper to bowl of eggs
6) Mix well
7) Pour mixture into 9x13 baking dish
8) Sprinkle with parmesan cheese
9) bake for 30-35 minutes
