Ingredients
Fajita meat (beef skirt)
1 onion, chopped
¼ c. soy sauce
1 ½ tsp. garlic powder (for each side of meat)
1 ½ tsp. onion powder (for each side of meat)
1 ½ tsp. season salt (for each side of meat)
Louisiana hot sauce, to taste
Black pepper, to taste

Directions
1) Begin by laying the meat in a glass pan and rinsing it with soy sauce and hot sauce.
2) Season the meat with the dry spices.
3) Flip meat in pan and repeat.
4) Refrigerate meat and let it marinade for 24 hours, turning after 12 hours.
5) Drain and discard marinade.
6) Mesquite wood is recommended for grilling the meat.
7) When the wood is reduced to embers and the charcoal is gray, place one chopped onion on the charcoal. This will help give the meat extra flavor.
8) Then place the meat on the grill and cook for several minutes on each side.
