Mom's Three Layer Berry Cake

Ingredients
White Cake
-------------
1/2 cup shortening (or butter)
1 cup sugar (or 3/4 cup honey)
1 tsp vanilla
2 cup flour
1/2 tsp salt
1 T baking powder
1 cup plain yogurt (or milk)
2 eggs

Cream Filling
---------------
2 - 8oz packages of cream cheese
1 1/2 cups powdered sugar
1 tsp vanilla
1 pint (2 cups) whipping cream

Berry Topping:
----------------
1 3/4 cup cold water
1 package strawberry or raspberry junket
4 cups (16 oz) frozen raspberries or marionberries


Directions
White Cake:
-------------
Can substitute standard white cake mix if desired
Bake White cake in 10 x 15 inch pan or tall 9 x 13 inch pan
Cream shortening, sugar, and vanilla
Mix in dry ingredients
Add eggs and yogurt and beat 1 minute
Pour into lightly greased 9x13 baking pan
(use deep 9x13 pan or regular 10x15 pan)
Bake @ 350 degrees for 20-25 minutes (do not overcook)

Cream Filling :
---------------
Mix softened cream cheese, powdered sugar, and 2-4 T of whipping cream
Whip the rest of the whipping cream
Fold together and add vanilla
Spread over cooled cake

Berry Topping:
-----------------
Add cold water to raspberry junket in a pan
Boil 1 minute stirring constantly
Add cooled junket to frozen berries and stir
Spread over cream filling

Refridgerate 4-5 hours before serving
